Potato & Egg Tapas Recipe
Cook and slice 1/2 potato per child before preparing this tapas. A few minutes before serving, brown the potatoes in a small skillet and add beaten eggs. Cover with a lid. After two minutes, the eggs should have cooked and can then be seasoned with a little salt. For very young children, let the dish cool a few minutes before serving. Cut into small wedges and serve with cheese and fruit.
Children are sensitive to strong flavors, but tapas can be mild and very healthy. A menu can include fresh fruit (apple slices and blueberries are great choices), and vegetable and cheese sticks are a great addition.
